Key Responsibilities
- Act as the Head Chef's close partner in daily kitchen operations
- Guide and supervise the brigade through the busiest services
- Work with confidence across sections, above all grill and pasta
- Shape new dishes, seasonal menus and refinements to existing recipes
- Develop junior chefs through training, mentoring and encouragement
- Preserve exacting standards of cleanliness, food safety and order
- Oversee preparation, stock rotation, ordering and waste
- Have each section organised and fully stocked before service begins
- Set a calm, consistent tone for the whole kitchen
Requirements & Eligibility
- Minimum 1 year as a Sous Chef in a busy à la carte restaurant
- Considerable experience in high-volume kitchens
- Excellent cooking skills, with a particular strength in grill and pasta
- Strong leadership and communication skills, supported by experience training and supervising kitchen staff
- Attention to detail and a commitment to cleanliness
- A composed, organised working style
- Poise when the kitchen is at its busiest
